Knoppix HD
 

Does Knoppix HD give you the option to boot into Windows when it is installed, or does it install over Windows? If it installs over, I'll just use it as a live CD

no it gives you the option to boot to windows

just use the debian style install as it will give you greater control

it's been a while since i did that, but, as best i remember, you have the option to choose which partition to install to. you may need to prepare a partition/partitions (remember swap) before hand. to be sure have a look at these links,
