Not really very well, and may corrupt your Itunes folder. There are alternatives such as gtkpod for older iPods, or running iTunes under Wine, which works sometimes with some versions, but if you're up-to-date on your iOS install on newer hardware you'll almost certainly have more trouble than it's worth.
