is TrueCrypt the only way to have a hidden OS?
 
With TrueCrypt you can create a hidden partition and place a full OS in there that is "undetectable"

are there any FOSS tools out there built into Linux that would allow this without the use of TrueCrypt? Not that I dont trust TrueCrypt, on the contrary I do, just wondering if there are other/better solutions out there.

If you have your /boot partition on a different storage device (for example an USB stick) it should be pretty easy to use an unpartitioned disk as container for an encrypted filesystem. In that case the same things that apply to hidden Truecrypt containers should also apply to non-existent partitions on a disk that seems to be filled with random data.
