IMAP Server (Mail Deletion)

Well, congratulations for me, I have set up DNS Server and Email Server and I'm very proud. However I am wondering on one part of it. Firstly I will give you a list of what I'm using:
Fedora Core 3
Postfix for MTA
Dovecot for the IMAP server
Outlook 2000/2003 for the email client

In a windows based environment using Exchange server I am pretty sure that if an email was deleted from outlook it can still be retrievied from the Exchange server. When an email is deleted in outlook for IMAP server it has a strikethrough line in it, to get rid of it you go to edit and purge deleted items which delete it off the IMAP server. Is there a way or a place that the Emails on the IMAP server are not actually deleted? i.e. could I retrieve an email from IMAP server if I really needed to?

"Deleted" emails are marked with the DELETED flag in a standard IMAP server. Most email clients keep track of the DELETED flag and put those messages in a seperate folder. When a folder is programmatically closed on the IMAP server, it has the option to be "expunged". If the folder is expunged, then all messages are truly deleted from the server storage.
