So does i686 in package names.

x86_64 = 64 bit.

If you see IA64 that is Itanium (64 bit).

No, it doesn't mean 'server' at all.

No, i386 is a processor family.

A distro that is labeled i386 will run on a x86-64 bit system most likely but it is intended for the intel and some clones of the 386 family.
