Ok, but then how do I change my second monitor's display to 1920x1080? It will only let me select 1024x768 as the highest resolution.

On most modern distros, removing /etc/X11/xorg.conf allows X to automagically utilize each display's native mode. Having an xorg.conf usually disables automagic. If you share your Xorg.0.log via pastebin we might be able to spot a problem and suggest a solution. It should help us if you share output from the following
Code:
inxi -GxxSM
xrandr
run from within an X session. Output from these commands can be redirected to a file which can be uploaded or pasted from, e.g. 'xrandr > somefilenameofyourchoosing.txt'.

Reading around the internet, I am still not sure what needs to be changed in my xorg file. Please help!

My xorg file.... Sorry, I do not know how to copy and paste it as done in other posts.
You should have started a new thread as this is over 13-years old!!
Which OS/release?
Have you looked at "xrandr"
