How to point two domain names to one IP address

I want my web host (he runs Linux) to create virtual servers on the IP address I'm using, but he doesn't know how. I want to host two or three separate domains with low space/usage demands on the same IP address; I have a dedicated IP address for the one domain, and don't see why I can't host a couple other low-demand domains on that IP address.

Can anyone help?

I will assume you are using Apache. Apache has some excellent tutorials.
