How to deactivate automatic "summer time"?

Hi people...

Last weekend (9th-10th October) my RedHat 7.2 and 8 machines shifted 1 hour ahead in time by themselves, problably because of "Daylight Saving Time". But the Brazilian Government put the beginning of that in 2nd November, date of mayor election in our cities.

It would help me so much if there wasn't no automatic wrong decisions on my servers. Somebody knows how to deactivate this stuff? I have network traffic monitoring on these machines and to maintain the databases consistent I need no "time jumps" (only I order it...)
