Question evolution server problems

Just installed Ubuntu 10.4 onto a notebook but whilst I can send E mails from Evolution, after configuring the servers etc I cannot send any. I want to get back into the configuration part to alter the details but cannot . The Help icon gives me a Contents option/F1 button but neither works.
How do I get back into the configuration system and is it possible to add another E mail address to the list.

Try Edit >> Preferences >> Mail accounts
