Edit/customize Gnome Panel

I am looking for a way to edit the Gnome Panel menu items and what they link to. I want to change the System => "Lock Screen" to point to a different screen saver and can not seem to find where the file with the information is located. Anyone have a idea?

I did find a similar editor when I click on edit menus but they still do not allow editing of the "Lock Screen" and "Shut Down".
