desktop apps on Linux Unstable


I'm a linux newbie. I understand that Linux is very stable OS as a server. I've been trying Linux for a few months, Mandrake 8.2 and Redhat 8.0 but I found that many desktop applications on Linux are not stable enough. For example, my mozilla and netscape browsers crash very frequently. And Linux JVM is also not stable as Windows' and Solaris'. The Java applet on the Mozilla or Netscape browser is worse. So I'm wondering why Linux is stable for servers and not stable for dekstop applications.
(When I started using Linux a few months ago, I used to tell my friends that Linux is a very stable and powerful OS and that's why I'm using it. One day, one of my friend came to my house and surf the net with my Redhat 8.0. Then the mozilla browser crash a few times and he said "Is it the stable OS what you said?".
This is quite an embarrassment.)
