Changing default test editor in redhat 7.1

I'm using redhat 7.1 with the gnome desktop

I was wondering how to switch the default editor

from emac to gedit.

pretty sure you can just set EDITOR=gedit in /etc/profile or such like

I took a look at /etc/profile but didn't see an entry for edit

is there somewhere else I should be looking?
