kali is for experienced users. kali is not meant to learn anything. So if you wish to learn use a more user friendly distro, like ubuntu, mint (or whatever you prefer). All the tools (installed on kali) are available on these distros as well.
OP: pen testing is a huge field - what area are you interested in? Network, OS, web apps, etc. The tools for each area are very specific.
I use kali at work but not at home because it is a huge pain - way too many tools for what I do and because it's rolling, the constant updates force me to have to update the VB guest additions repeatedly. I actually use a "normal" distro and just install what I need.
As others have suggested, just use Kali's own docs or Google the specific tools/techniques you are interested in for examples. It takes time to learn this, be patient. I have been doing this over 15 years and am still learning things.
