Temp hold up mail in mailq
 

I am trying to determine who mail is being sent to on my server port 25. I believe that there is some unknown traffic leaving my server and the best and only way I know how to see this output is to view it in the mailq. Is there any way to temporarily make mail hold up in the mailq? Not sure how this would be done.
