If I created a small network, with 2 computers, will I be able to email btwn the computers? Will the email addresses be user@hostname, so that if I create a new user in linux, than a new email address will be created? or do I have to add users to some kind of email server?

Basically, I need a jumping off point to learn email over a LAN. Can anyone provide some info, or give me a topic to search for on google? Thanks

The topic you should search for should be how to setup your specific email server. Like if you are going to use sendmail then learn how to configure sendmail. Go to sendmail.org and read thier docs. Many people on this forum have recommended using postfix because it is easier to setup and it is more secure. I've never used it so can't recommend it personally, but I'd look into installing postfix and using that. Your email address will be dictated by how your email server is setup.

You are probably going to have to learn how to setup DNS as well.
