setting linux as an email server

I am a newbie trying to set up an email server using linux to receive and send email for windows xp users. I was wondering if there was howtos' tutorials that would describe how to do that. I have mandrake 9.1 rc1 with postfix installed and running (i think). I have a domain name and an INTERNET dns server with an mx record for my static ip. my gateway dsl/router has pinholes and ipmaps set up to recieve and send email using the linux box. See the worst part is that I got it to work earlier. I could send and receive emails ( only through webmin) and then it stopped working. As i was trying modify settings to allow windows users to get their email by installing courrier-imap which did not work and made things worse. I really want to be able to fix this without having to reinstall the entire machine. I would greatly appreciate any help .... :newbie:
