If you enable a network device through some UI it might use some form of "logic" (if you can call it that) to disable other network devices before you enable one or alter routes (nor not). If you enable your ethernet device by hand, set routes and all that, then enable your Wifi device by hand and add routes, then enable your Bluetooth device by hand and add routes you might well end up with the ability to direct traffic to different destinations over different "wires". So I think the answer would be: "it depends".
