Open Source "Service Selection Gateway"
 
Is there a solution out there that would allow me to implement a SSG fucntionality with a Linux server?

I would like to intercept unauthenticated traffic and redirect it to a website where I can inform and authenticate the users.
Then, based on the authentication, I would like to specify a profile for the user.
- > Full access for legit people.
- > limited access for guests.


I know Cisco en Juniper offer similar services, but I would like to set something up on a linux box.

There are a ton of hotspot and portal packages out there that do what you are looking to do.

I do not know if such a software exist. I will watch this page to see if someone has more information on it. In the meanwhile, you can have a look at http://nocat.net/. They have something similar, but not the exact stuff that you asked in your question.
