NFS is a native UNIX filesystem. Samba is used if you have windows machines on the network. Also, given NFS's age, it may not be as secure as Samba, however there is a newer version of NFS coming out (according to a magazine article that I read.) I you want to network between Linux and Windows, you need to install samba.
