network management utility

I am looking for a utility that will allow me to see real time problems with bounced email messages to my mail server. I am using Exchange 2000 (sorry not my fault). Would Ethereal suffice? NMAP?

What can I put on a Linux Server on my network to track down bounced email problems.

Thanks in advance.
