I have a linksys and by defalt the it sets the lan addresses using 192.168.1.X.

We have 8 computes connected to the linksys at the moment and I would like to switch over to 10.0.0.1 - 10.0.0.8.

Is there any difference between using 192.168.1.X vs. 10.0.0.X ?

No, there's no difference. You can just set netmask in both cases to 255.255.255.0 (for 10.0.0.1 and similar it's 255.0.0.0 by default, but it doesn't change anything, in fact).
