Basically, if you want to set up Apache as an audio/video streamer, then just put the audio/video files in your htdocs folder (or a subfolder within it) and you're done!
Possibly create an index.htm page with links to each one... There are also much more complicated ways (real streaming), but for that follow this link:

Why don't you do something much simpler, though? Use VLC!
VideoLan Client will make it awesome to stream both audio and video, and there's a brilliant article on it
