If you want to edit the /etc/fstab file on an installed system, you need to first create a mount point (when booting a live usb), then mount the specific partition and to modify system files you need to be root (or use sudo). I'm not sure what you are trying to do but, if you change the /home partition to another partition and do not make the change in the /etc/fstab file, you will not have access on boot/login. If you boot to level 3, you should be able to manually mount /home as root (sudo on Mint). Not sure what the purpose is?
