Google considers this a "feature" and not a "bug" and they have NO intention of "fixing" this.
FYI: Gmail is not open source, so no one can fix it for you. I might recommend an FOSS email client that is gmail compatible, but I believe some of that behavior is server enforced.
The real fix is to stop using gmail, but if you have a well established email community and large contact base changing could be problematic.

I use the gmail client on my phone, and the web interface on my laptop (Manjaro), and see the same behavior. I do not remember it being different for at least the last couple of years, but my memory is old and not hot swapable.
The problem was that I was autodarkmagically unsubscribed from Gmail Trash in Thunderbird. I right clicked on my me@gmail in the top left and selected "Subscribe" where I was able to click on Trash under the gmail section. I am now getting deleted emails in trash on Thunderbird,
A few days ago I got message in Thunderbird something like that I needed to clean up Thunderbird. I am thinking that is what caused me to be unsubscribed from trash.
