I blocked a site before, but I have no idea how I got to the "blocking" page.
When I visit Chromium's Settings, Privacy and Security, I see:
You and Google, Autofill, Privacy and Security, Appearance, Search Engine, Default Browser, and On Startup.
When I click on the Privacy and security sub-Heading, I see:
"Clear Browsing Data," and "Site Settings." I do not find "Block Sites"
under either sub-heading.
I am using Linux Mint 18.3 64-bit, Chromium 81.0.4044

Thanks for the tips
I recommend hosts-based blocking. But it won't work with Google products (i.e. Chrom/e/ium).
Or a Firefox add-on like uMatrix, uBlock etc.
I use Firefox less, and less, due to the amount of popup Ads I get, when using that browser. Yes, Google
seems to want to take over the world, but Chromium feels a tad more comfortable. I'll resolve this in
time.
