Well, the best way to get industrial information is always read their journals and forum. e.g. http://www.linuxdevices.com/

I am not in this industry or has any skill in embedded system, but as far I can see, linux has made inroad into a lot of consumer electronic products (e.g. Linksys 11g router).

On the other hand, people also worry about the GPL issue. Because most of the time, they want to retain their hardware 'secret'. GPL forces them to release the source code and hence may expose their trade secret.

From the rules: http://www.linuxquestions.org/rules.php

Do not expect LQ members to do your homework - you will learn much more by doing it yourself.

Unless your professor has indicated it is ok to ask for assistance.

No, in medical field there is a lot of application of embedded system. Have a look at GE and you will find a lot of examples. e.g. a lot of vital signal monitors

I do not know if GE use linux at all in these kind of device. But I guess due to potential lawsuit they would be rather conservative...
