Are you seeing an option to install using UEFI when you boot the Elementary installation medium? You should since your hardware is EFI compatible and Elementary is derived from Ubuntu and Ubuntu has this capability. You definitely need to use EFI I would think for it to work. I've never used a Mac so haven't any advice on that. You might do a google or check the Ubuntu forums as they are very active and Elementary is based on it.
