There is no pre-built linux image or distribution for nokia phones now.
According to me it is possible. nokia ddt4 generation (such as 6310i) has a standart jtag interface. But before compiling and installing any software, we need some secrets about ram and flash to get any bootloader running. On the other hand, the bb5 generation(N72, N92....) has specialised and different interface AFAIK.

To get any os working in any platform you need a bootloader. To get any bootloader in any platform you need deep technical information about targets cpu, ram, ... Then you need to PORT the bootloader to the target, to get linux image working. But, it is not very easy to find technical documentation on the internet for such things(ram, cpu, flash info), because of that is an Intellectual property problem for nokia corp.

On the other hand, device hacking (or reverse engineering) is generally a complicated process. And may require years to get a stable system unless you have several experienced hackers.

But if you wanna try, it is a good starting point check out psplinux, uclinux and keep googling http://forum.gsmhosting.com/

You need at least 1mb of ram to get linux image (v2+) running. inspect your device whether it has.
