Options Missing in Kernel config

So basically going to recompile to change the clock rate and a few other things in the kernel for a centOS server... And while going through the configuration options High resolution Timer, Dynamic ticks, Low Latency Desktop, anticipitory option, and the actual clock rate kernel_hz=, are all not showing up...

Now I'm not sure if theres a way outside of menuconfig to setup the values before the kernel compile, or if theres a way to toggle it so the options are available through make menuconfig, although either way all of the above options are to be edited.

(first time compiling a kernal but searching around... asking on IRC and googling for answers helped to know that these are normal options or should be in the kernal configuration menu...)

Perhaps those options aren't in 2.6.9.

Yaya they weren't

But now during a compile of a 2.6.34
there is an

drivers/built-in.o(.init.text+0x4a96): In function `con_init':
include/trace/events/kmem.h:81: undefined reference to `.L1051'
make: *** [.tmp_vmlinux1] Error 1

This was done after a make oldconfig then menuconfig to change a few small settings(cpufreq)
during make bzImage
