So after trying an installation, I've ran into the same issues.
My computer worked very well when running off USB, but I've run into similar performance issues once it is actually installed.
Additionally, for this installation I gave it the entire SSD.

Sounds like an entire SSD that has bad area(s).

Oops, hopefully not.
What's the best tool to check on an ssd in this modern day and run it from a 'Live USB'?
One tool other than good old fsck is smarctl
