scanner, encryption, security question
I am looking to buy a scanner because I want to transfer my bank statements from paper to data. I am wondering if there is some sort of encryption or hashing method or something else entirely that will allow me to prove that I haven't altered my documents with gimp or open office or whatever? Also, is there a specific model that might do what I want?

No, there is no fax or scanner that cryptographically watermarks a document.
