Nevermind.
On the server I partitioned my 2nd hard drive into 4 primary partitions using fdisk. I then used tune2fs to change them from ext2 to ext3. After that I changed etc/fstab to have them mounted at boot time to a directory I created. I then added them to etc/exports with permissions for the users to be able to access them via NFS.
On the client computers I set up a director to mount them to and changed etc/fstab to automaticall mount them at boot time.
I still need to set up the directories as the Samba shares but that should be a snap with Swat.
