New USB headphones and mic - not working

I have Debian 11 and expected the headset to work out of the box - but it hasn't.
I have opened Pulseaudio - and it has displayed the headset brand name under 'output devices'. But I can't get audio through the headset.
I opened alsamixer - and it has also displayed the headset and it is giving a mic option under F6.
But again I don't know what to do to make the headset work.

Does anyone have something similar?
Or does anyone know what settings will get the headset to work?
Although on the advert it says the headset works with 'other' devices - the manual just refers to Windows and MacOS.

Use “pavucontrol” to set it as the actual audio output device.

Pavucontrol is Pulseaudio.
Nonetheless I enetered 'pavucontrol' on the terminal and accessed Pulseaudio.

I then navigated to the 'Output Devices' tab.
But this time I pressed the green 'tick' button for 'Set as fallback'.
With that I was getting sound through the headset. Problem solved.

I'm pretty certain I was getting an option for a microphone too.
But then I played with the 'Configuration' tab and chose something different to 'Analog Stereo Output'.
I immediately lost sound.

So rebooted and plugged in the headset again.
Pulseaudio recognised the headset.
I pressed the 'Set as fallback' button on the 'Output Devices' tab - and I got sound.
No mic options though.
I'm hoping the mic option will work once I get into an online course I'm doing.
The hardware is fifine H6 headset and works out of the box on Linux.
You just need to configure the green 'tick' button on Pulseaudio.
