Need fan speed controller suggestion

Here's the dilemma... I have four fans I want to control...
o one regular single speed fan
o one Zalman CNPS7000
o two ThermalTake Smart Case Fan II's

I think the single speed and the zalmans can be controlled by most fan controllers... BUT all the controllers I've looked at have warned about controlling variable speed fans... Why? And are there any fan controllers that can control a varialbe speed fan? Or will I have to get out the fabricating gun?
