i've got 2gb on my ubuntu. i use 900mb at max... but the rest is used by the cache, so never mind the extra money. everything is very fast. i'am happy!
with 512 mb the system often slowed down.

when you only have 256 mb i would recommend to use Xfce Environment
( instead of gnome or KDE. If you don't know how to do this and you're to lazy to look it up, just install FC4, there you can choose the Environment before the login.
My PII 300Mhz (128MB Ram) Laptop works fine with Xfce
