Linux doesn't hate your card. It's just that the ati drivers are bad, and that's only the ati's fault, not the linux one.

It depends, to get multiple monitors working you need to use either xinerama, or a multihead setup. Multihead should be no problem, but if you are going to use xinerama with ati then you should be aware that ati is particularly buggy when it comes to xinerama (not that without it you are not going to have problems anyway).
That's my experience with a lot of different ati cards on different boxes.
So, I recommend not to use xinerama, and setting up a regular triple head setup without xinerama.
Ps. All i've stated here is related to the fglrx driver.
