I managed to figure out what setting I needed; However, it worked only after I uninstalled the driver and removed /lib/modules/fglrx then reinstalled.
Below is my xorg.conf. Without the setting

If some poor soul happens to stumble upon this thread having the same problems as I did, I hope the above will be of some help. As of Ati's latest driver (8.31.5 and apparently some versions below this one)
option "DesktopSetup" "mirror" seems to be necessary to get my X600 to play nice with openoffice.
All in all, I curse the day I bought that Ati trash. It have brought me nothing but pain, tears and sadness.
