What Would Be a Good Distro for a Linux Server?

I am planning on converting my old computer with a Pentium 3 processor that ran Windows 98 into a personal Linux file server. It needs to be able to serve files to my desktop running Windows XP, and to my MacBook running OS X v10.4.8. I would prefer to have a distro with an easy installation, and a lightweight GUI. Any suggestions?

If it's just for serving files look at:

freeNAS
NASlite
Openfiler
ClarkConnect
SME Server

I would also like to be able to modify files, and be able to backup files to the server. I guess I should have included that in my first post. Aorry about that.
