Uninstalling Linux is a matter of deleting the partitions it is stored on with your favourite partitioning tool (I rather link cfdisk, if you are under Windows try fdisk).

Getting rid of grub from the master boot record is just a matter of installing something else on top of it. e.g. the windows boot loader (fdisk /MBR)

If you plug in your XP disc you can format the partition still, and then choose Repair to reinstall XP into the bootloader

Procedure with Windows XP/2000

Under Windows XP, you can restore the original MBR as follows:
Boot from the Windows XP CD, press the key "R" in the setup in order to start the restoration console. Select your Windows XP installation from the list, and enter the administrator password. Enter the command "FIXMBR" at the input prompt and confirm the next question with "y". Finally, use "exit" to restore the computer.
