What is the part of servers delivered running Linux? and windows ?

Your questions doesn't really make sense. Do you mean what is the percentage of servers running Linux and windows? which then begs the question what type of server? web server? DB server? file server? mail server?

There are also more than those 2 operating systems being used..

I think if anyone were to answer this question they'd have to google it, and the info will be a year or 2 old, in which case probably easier to do it yourself.

You can check out Netcraft which keeps statistics on what different sites are using for webservers. Past that, might a little difficult to pinpoint.
