how easy is it to take a datebase that is already up and running and move information in and out of it?

googling for apache + php + mysql should give you enough to read to keep you busy for a year. Try 'lamp' too....

To manage the your Mysql databases consider using phpmyadmin...
It's really simple and powerfull, give it a try!
