Network Choke, Timeouts?

Ok, Im running Fedora core 2 on a Dual Xeon 2.8Ghz with 2gb ram. I cant seem to figure this problem out. I run game servers. I have just 2 on at the moment, 1 of which is empty. On all of our servers it seems we have this random skip of either cpu spike, or network latency. Pings are great, mine are in the 20 and everyone feels this at the same time. I can't for the life of me figure out why we have this skip. If i monitor my servers, ill recieve random timeouts on my network connectivity graph. What could possibly be causing this? Any ideas?

Check your cron scripts. The slocate/updatedb jobs can be hellishly heavy and drag down performance to a crawl if you're unlucky (especially if you have slow disks). I put my big jobs early in the morning (a lot of jobs between 5am and 6am) since not many sane people will play at that time anyway.

Ive disabled practically everything. Including cron. I stumped on what this could be.
