if i wanted to install a mail server on my server..what do i need?

if someone owns a domain and i am using a subdomain for my box using their dns....can i have a mail server running on my subdomain.domain.com box???

Well basically a working system and MTA software like sendmail, postfix, qmail and others - and you surely can use subdomain.domain.com

You might need a DNS entry which says mails to all m/cs in your subdomain should be given to your server.
Eg.
client A 1.1.1.1
MX 10 server.subdomain.com.
