Hello, I am a happy user of a RH6.1 Athlon PC, but I would be even more so if I know what processor to choose when I recompile the kernel for some extra speed, in the list of choice is only the Intel family of processors, which one is a good choice?
Is there some other options to remember when compiling for Athlon?

If you are using a 2.2.x kernel then the best option you have is PPro/6x86MX. If I recall correctly, the 2.4.x series has an Athlon option.
