Is it possible to assign keyboard shortcuts in GNOME apps?

Is it possible to assign keyboard shortcuts in GNOME apps?
I mean that I can assign almost everything I want in KDE apps, i.e. FileSaving on F2 in KWrite. Win+E to call Konqueror, so on. I wonder if I can do the same in GNOME (or fluxbox???). Thanks.
