How to find the command line to launch app

How do I find out the command to launch a program. I am trying to set the default apps for video, picture and music files. I got mplayer opening videos by using the command GMPLAYER, but cant figure out the command for electric eyes, XMMS etc. Do you just have to know or is there an easy way to find out for any particular app?

Electric eyes - ee
XMMS - xmms
but to be more precise for future programs you might have is to remember which rpm it came with and run
rpm -ql package
if it isn't an rpm and you built it from source look under src directory of the source tree for that particular app, also read README files, etc.
