To disable any sound drivers in the kernel, go into your config (make menuconfig, make xconfig, etc) and make sure everything is disabled under Sound. [edit]: Then rebuild the kernel image and modules of course.
This is just speculation: As far as deleting your bad ALSA install, just try installing the current version of ALSA. My guess is it will replace/overwrite. If it doesn't, well at least you have the current version installed now.
