how do you add/remove Gnome menu entries manually?

redhat 9.0
kernel 2.4.22
desktop: gnome

[ I believe they are gnome-entries because that's the desktop I'm in. But in all reality, KDE and Gnome look exactly the same with the new Blue Curve thing. ]

I installed Crossover office on my machine. It works beautiful but sometimes when you uninstall something, it leaves behind some entries on the gnome menu that I can't figure out how to get rid of .

I tried going to /usr/share/desktop-menu-files but I don't think I'm on the right path here.

How do I remove gnome-menu entries manually? like if I want to remove the "network servers" or "Sound & video" or "Accessories"?
