gnome's application menu preferences

anyone know of a way to set gnome's 'applications' menu to NOT scroll if there are more items than will fit on the screen (like the games list) but instead use fly-out menus like KDE's application menu?
yes yes i know , "use kde" but there are other reasons why i'm using gnome

ok so maybe it's not possible so is there just a way to add my own menu items to the "applications menu'?
i mean i have so many items under games i'd like to make a submenu of "my games" or something.

any ideas?

Gnome menu personalising is too dificult, but not completely impossible. The programs you see in the menu use a .desktop file too select their name, startup features, folder/category etc. I've been trying to find a gui-programme to help set it up to my likiung but haven't found anything. However, it is possible to edit these .desktop files. So far I have changed the name of soma applications, but haven't done anyting else, although I distinctly remember a string of information related to the group the programme should belong to.
