First, Open Source came before Linux. The GNU project was started by Richard Stallman, and had a kernel under development when Linux came along.
RedHat is one of many vendors that strives to make money packaging and supporting Linux operating systems. Anyone that does that must respect the open-source license for the various components. In the process, they might add some proprietary pieces.
